INSTRUCTIONAL COURSE DESCRIPTION

The course is applicable for those individuals seeking a comprehensive overview for starting and operating a gelato, premium ice cream, and soft serve yogurt retail operation. A significant part of the two-day class will serve as helpful “refresher” for those currently open & operating.

Two day academic course: 10:00am to 4:00pm both days.

Curriculum outline

  • Architectural design and floor plan
  • Financial projections and capital requirements
  • Complete equipment requirements and training
  • Regulatory preparations
  • Sanitation methods
  • Hands-on training for ice cream, gelato, sorbet, and yogurt creations
  • Food science overview
  • Food cost analysis
  • Menu formation
  • Additional product offerings, espresso, panini, and pastry concepts
  • Small wares information, scales, mixers, spatulas, etc.
